Why I created Nochi

Ellie, founder of Sweetifi

I grew up loving the dense, elastic pull of Injeolmi (인절미) that classic Korean rice cake with a chew you can feel in your jaw. What I didn't love was the sugar crash that followed, or knowing I was eating something with no real benefit to my body.

So I went looking for a better version. What I found were chalky protein bars and keto cookies packed with erythritol, maltitol, and a list of ingredients that wrecked my gut. Nothing had the chew. Nothing was honest. I kept putting things back and walking away with nothing.

If you've ever done that, wanted the snack that tastes like home and works with your body, and found that it simply doesn't exist, then you already know why I made this. I didn't want to settle for another protein bar pretending to be dessert. I wanted real chew, soft stretch, and the macros to actually support a gut-healthy life. After countless iterations in the kitchen, Nochi was born.
